Dry Rub

beer chicken recipeCarolina is famous for its BBQ. Everyone who lives in the Carolinas has their own recipe. This BBQ sauce is not too sweet or sour, its just right. Its easy to make and remember. Most people have the ingredients on hand. I used to buy a Boston butt roast (pork) and put it in a crock pot with this sauce. Cook until done then remove. Pour off the grease (there is quite a lot). Remove any bones. Add more sauce, if necessary I'd make more. Chop up the meat and serve. Makes excellent Barbeque Pork.

North Carolina Bbq

Ingredients:

  • 1 cup of catsup
  • 1 Tablespoon of mustard
  • 2 Tablespoons of Worcestershire sauce
  • 2 Tablespoons of Brown Sugar
  • 2 cloves of Garlic
  • 1 small sweet onion
  • Dash of Creole seasoning or hot sauce
  • Crock pot or large pot

To Prepare: Mix catsup and mustard together first. This is important if you don't the mustard will clump. Mix until smooth. Add Worcestershire sauce and brown sugar. Mix again until smooth. Add Creole seasoning or hot sauce. Chop garlic and onion and add to other ingredient. You can use this sauce for just about any meat except ham. Coat half of mixture on meat while coating. Save the other half for dipping. Other excellent uses: Over Pork chops, Chicken, beef

BBQ Dry Rub

  • 1 Tablespoon Cumin
  • 1 Teaspoon Chili Powder
  • 1/4 cup Brown Sugar
  • 1 teaspoon dry mustard
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon pepper

mix all ingredients together. then rub mixture into chicken. cook chicken on grill or in a pan with a little olive oil until done.

Pork Spare Ribs Recipe

1 rack of Pork Spare Ribs

boil pork spare ribs until tender. (you have to do this, cause if you don't the meat will be tough) Heat pan or grill till hot. Put ribs on hot grill or in pan. brown on both sides. cover with bbq sauce. if using a pan, bring to a boil. turn heat down to simmer for about 1 hour. if you are grilling, brown each side, then use a brush and coat bbq sauce on top. cover grill, and reduce heat if you can by adjusting air vents. keep a close eye on the meat while grilling so it doesn't burn. the idea is to let the flavor of the bbq sauce seep into the meat.
