These are delicious recipes from my mother's recipe collection. My favorite Sweet Potato dish is the Sweet Potato and Pecan Casserole. These are so good and sweet they ought to be dessert instead of a vegetable.  Sweet potatoes are good for you. They contain fiber, vitamins and minerals.

Sweet Potato Bread Recipe

Sweet potato bread  is good with a cup of coffee or tea. It makes a good breakfast bread instead of your usual coffee cake.

Ingredients

  •  1 cup sifted flour
  •   teaspoon soda
  •   teaspoon salt
  •  1 teaspoon cinnamon
  •  1 cup sugar
  •  1 cup cooked mashed sweet potatoes
  •  2 beaten eggs
  •  2/3 cup melted butter or margarine

To Prepare: Preheat oven to 350 degrees. Sift together dry ingredients in a large mixing bowl. Make a deep well in center with a spoon and add sweet potatoes, eggs and margarine. Stir all to dampen. Pour into greased 8 x 4 x 2 inch pan and bake at 350 degrees for 45 minutes to 1 hour  or until knife inserted in center comes out clean.

Sweet Potato Marshmallow Recipe

Ingredients

  •   2 cups mashed sweet potatoes
  •   cup margarine or butter
  •   teaspoon salt
  •   1 cup miniature marshmallows

To Prepare: Preheat oven to 350 degrees. Boil, peel and mash sweet potatoes. Combine sweet potatoes, butter and salt. Place in 1-quart casserole dish. Bake uncovered at 350 degrees for 15 minutes. Sprinkle with marshmallows and bake another 10 minutes or until lightly browned. Serve

Sweet Potato and Banana Casserole Recipe

Ingredients

  •  4 medium sweet potatoes
  •  4 tablespoon butter
  • 1 teaspoon salt
  • 4 bananas sliced
  •   cup brown sugar
  •   cup orange juice

To Prepare: Cook potatoes in boiling water until tender, but firm. Cool. Peel and slice inch thick into a buttered 2-quart casserole dish. Dot this layer with butter and sprinkle with salt. Next layer with bananas and sprinkle with salt. Continue to layer alternating bananas with sweet potatoes, ending with a layer of bananas, brown sugar and dotted with butter. Add orange juice by drizzling over top of entire casserole. Bake at 350 degrees for 30 minutes or until top is browned. Serves 6.

Sweet Potato and Pecan Casserole Recipes

This casserole is a very good dish to serve company. Its good enough to be dessert.

Ingredients

  • 6 sweet potatoes
  • 1 teaspoon salt
  • 2 eggs
  • stick butter
  • teaspoon cinnamon
  • Brown sugar
  • Dash nutmeg
  • 1 small can crushed pineapple drained
  • cup chopped Pecan Pieces
  • Marshmallows
  • Milk

To Prepare: Boil sweet potatoes in skins until tender. When done, peel and put in a bowl. Mash the sweet potatoes. Add and mix together eggs, butter, cinnamon and nutmeg. Add brown sugar enough sweeten to taste. Stir in pineapple. If the potatoes are stiff, add a little milk to make them easier to spread in a casserole dish. Top with Pecans, then follow with enough marshmallows to cover top. Bake in a 350 degree oven until sweet potatoes are hot and marshmallows are slightly brown about 20 to 30 minutes.

Sweet Potato and Pineapple Casserole Recipe

Ingredients

  • 1 large can sweet potatoes stained
  • pinch of salt
  • 1 can crushed pineapple
  • 1 stick margarine or butter
  • 1 beaten egg
  • brown sugar to taste
  • cinnamon

To Prepare: Mix sweet potato, egg, salt, brown sugar and pineapple well. Put in 1 to 2-quart casserole. Dot with butter and sprinkle with cinnamon. Bake in 350 degree oven until well heated at least 30 minutes.
