Tacos Recipe

This is a recipe I just threw together one night when I had some chicken and wanted something different. You may have to add more olive oil or garlic as you cook. and this is better after a few hours as the flavor blends with time. You can also so used left over meat.

  • Boneless Chicken
  • 1 teaspoon of minced garlic
  • 1 small onion
  • 1 tomato
  • 1 green pepper
  • 1/2 teaspoon of chili powder
  • salt and pepper
  • Olive oil

Chop onion, green pepper and tomato separately. Put a small amount of olive oil in frying pan, enough to coat the bottom. Heat oil. Add garlic and onion to frying pan, fry until onion are translucent. Remove onions and set aside. Fry  Chicken until done. Add green pepper and tomato, cook until pepper and tomato are soft. Add cooked onions and stir. Add chili powder and stir. Season with salt and pepper.

variation: substitute the tomato with orange juice this makes a really good dish.

Cuban Black Bean Soup Recipe

The Cuban black bean soup is very good as is authentic.  You will need to soak your beans overnight prior to fixing the soup.

Recipe Ingredients

  • 1 lb. Black beans
  • lb. Onions chopped
  • 5 oz. Oil
  • 2 Tablespoon salt
  • tablespoon oregano
  • teaspoon cumin
  • 2 qt. Water
  • lb. Green peppers chopped
  • 1 teaspoon minced garlic
  • 2 Tablespoon white vinegar

To Prepare Recipe: Soak beans in water overnight. Add salt; boil until soft. Heat oil in pan and add onion and green peppers saute until onions are transparent. Add garlic, oregano, vinegar and cumin. Drain beans and add to pan of onions and peppers.  Simmer together for 15 minutes. Serve over hot cooked rice.

Simple Salsa Recipe

  • 1 large tomato
  • 1 small onion chopped or sliced
  • 1 jalapeno Chile pepper (optional; amount depends on how much heat you want)
  • 1 clove of garlic or 1 teaspoon of chopped garlic
  • 1 small green Bell pepper

Cut up vegetables. Put tomato in a food processor, add onion, garlic, a few slices of bell pepper and blend together. Add as many or as few slices of jalapenos as you want. Blend again. Or add a slice at a time. Taste. Then add more if you want.

Chicken Enchiladas

substitute: turkey

  • 4 cups of cooked chicken(left over would work fine)
  • 1 medium onion
  • 1 4 oz can of chopped green chilies
  • 1 can of cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 tsp. cumin
  • 1 bag plain Doritos
  • 2 cups grated cheddar cheese
  • salt and pepper

Place chicken, onion, chilies, soups and seasonings in mixing bowl. Stir to blend. Crush Doritos while still in bag until bite size. Add to chicken mixture and stir. Spread mixture into 13x9 baking dish and top with cheese. Bake at 375 degrees or until heated through and cheese is bubby. Serve with lettuce, tomatoes, sour cream and salsa.

Mexican Chicken Recipe

  • 1 medium onion
  • 1 can rotel tomatoes and chilies
  • 1 whole chicken
  • 1 can cream of chicken
  • 1 can cream of mushroom soup
  • corn tortillas
  • 1 medium bell pepper
  • cheese
  • chicken broth

To prepare:

Boil chicken and season to taste. remove bones. set aside.

Saute onion and bell pepper. Mix tomatoes and chilies and soups together. Add to onions.

Wet tortillas in chicken broth and layer in the bottom of a casserole dish. Place 1 layer of chicken, then spoon over soup mixture and grated cheese. Repeat. Top with more cheese on top  Bake at 350 degrees for 35-45 minutes.

Spicy Chicken Fajita Recipe

  • 1/4 cup olive oil
  • 1/4 cup dried red chili
  • 3-5 medium boneless skinless chicken breasts
  • 1 medium onion
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 red bell pepper
  • juice of one fresh lime
  • salt
  • black pepper
  • cayenne pepper
  • cilantro sprig
  • corn or flour tortillas
  • grated cheese for topping
  • sour cream for topping

to prepare

chop red chilies and fry in oil for 5 minutes. ( may irritate so do so in well ventilated kitchen). Pour into container, seal and set aside. Put leftover oil in refrigerator to use to season other dishes.

Slice chicken breasts into strips. heat a skillet with tbsp. of the chili oil. Add sliced onions and peppers. Fry with chicken until chicken is done. Add lime juice, cilantro, cayenne, salt and pepper to taste. Fry 1 or 2 minutes more. Serve hot in tortillas with taco toppings.

Beef Enchilada Casserole


  • 4 corn tortillas
  • 5 oz. ground beef
  • 1/2 cup onion chopped
  • 4 oz. cheddar cheese grated
  • 1 can of mild enchilada sauce
  • non stick pan spray

Cook ground beef and onion until meat is done. drain grease. Spray casserole dish with non stick spray. Layer ingredients in this order: tortilla, sauce, ground meat, cheese. Repeat

Bake 350 degrees for 15-20 minutes or until hot.
