The shrimp recipes featured here are quick and easy to prepare.  I love shrimp. Its a healthy dish, low in calories. If you are watching your cholesterol you may want to limit your intake of shrimp.

SHRIMP Toast Recipe

This shrimp recipe is easy  and delicious. It is easy to make. The onions, garlic and parmesan cheese really add flavor to this dish. This is a delicious recipe from my mother's recipe collection. Its very healthy too. Shrimp is low in calories but not cholesterol. This recipe will make enough for four people.  This dish has 260 CALORIES PER SERVING. 11 GM'S FAT. 141 CHOLESTEROL. 550 MG'S SODIUM.

Ingredients

  • 1 LB JUMBO SHRIMP
  • 3 LARGE GREEN ONIONS
  • 2 MEDIUM SIZED CUCUMBERS
  • 1 LARGE GARLIC CLOVE
  • 6 THIN SLICES OF WHITE BREAD
  • 2 TSP CORN OIL SPREAD
  • 1-1/2 TSP PARMESAN CHEESE
  • 1-1/2 TSP DRY PARSLEY FLAKES
  • 2 TBSP OLIVE OIL 
  • 1/2 TSP OF SALT
  • 1/4 TSP PEPPER 
  • 2 TBSP LEMON JUICE
  • LEMON SLICE FOR GARNISH PEEL

To Prepare:

CLEAN AND RINSE SHRIMP IN COLD WATER AND DRY. SLICE THE ONIONS AND PARTIALLY PEEL THE CUCUMBER AND SLICE LENGTHWISE IN HALF. REMOVE SEEDS AND CUT CROSSWISE INTO ONE HALF INCH SLICES.

SLICE THE GARLIC.

PREHEAT THE BROILER. CUT THE CRUST FROM THE BREAD AND SPREAD WITH THE CORN OIL SPREAD OR OLEO, SPRINKLE WITH THE PARMESAN CHEESE AND PARSLEY FLAKES.  CUT EACH SLICE DIAGONALLY .

PLACE ON COOKIE SHEET. POUR OLIVE OIL INTO  A 12 INCH SKILLET. PLACE ON BURNER SET AT MEDIUM HEAT. COOK THE GARLIC UNTIL BROWN THEN REMOVE FROM PAN WITH SLOTTED SPOON AND DISCARD.

IN THE REMAINING OIL IN THE SKILLET OVER HIGH HEAT, COOK THE ONION UNTIL GOLDEN, ADD SHRIMP AND SALT AND PEPPER. COOK UNTIL SHRIMP LOSES ITS PINK COLOR. STIR IN LEMON.

TO THE SHRIMP MIXTURE, ADD THE CUCUMBER AND COOK UNTIL IT IS TENDER -CRISP. TOAST THE BREAD UNDER THE BROILER FOR ONE OR TWO MINUTES.

SERVE.

ARRANGE SHRIMP MIXTURE ON FOUR WARM DINNER PLATES. SERVE WITH PARMESAN TOAST. GARNISH WITH LEMON AND PARSLEY FLAKES.

Shrimp Harpin recipe is meant for 8 people. If you want a smaller portion just be sure to cut each measurement of ingredients in half.

Shrimp and Rice Recipe

Ingredients

Serves 8

  • 2   lbs. of JUMBO SHRIMP
  • 1 tablespoons Lemon juice
  • 3 tablespoons vegetable oil
  • cup raw rice
  • 1 onion
  • 1 green pepper
  • 2 tablespoons butter or margarine
  • 1 teaspoon salt
  • teaspoon pepper
  • 1/8 teaspoon mace
  • dash cayenne pepper
  • 10- oz can tomato soup (undiluted)
  • cup sherry
  • cup almonds

To Prepare: Place shrimp in a 2-quart casserole. Sprinkle with lemon juice and oil. Cook rice as label directs. Drain. Refrigerate all.  About 1 hr and 10 minutes before serving. Heat oven to 350 degrees. Set aside 8 shapely shrimp for garnish. Saute butter, green pepper and onion until onion is transparent. Add cooked rice, salt, mace and cayenne pepper, soup, cream and sherry and almonds to shrimp in casserole dish. Save a few almonds to sprinkle on top. Toss well. Bake uncovered 35 minutes. Then top with reserved cooked shrimp and almonds. Bake 20 minutes longer or until mixture is bubbly and shrimp slightly browned.

Shrimp Fettuccini Recipe

  • 1 lb. cooked large shrimp
  • 1 lb. fettuccini noodles
  • 3/4 cups grated parmesan cheese
  • 1 cup whipping cream
  • garlic to taste
  • 4 tbsp. butter

In saucepan over low heat, combine cheese, garlic and butter. stir until cheese melts

Slowing add whipping cream. prepare noodles according to package. Add shrimp to sauce and stir completely. Serve shrimp sauce over pasta.

BBQ Shrimp Recipe

  • 1/2 cup olive oil
  • 1tbsp parley flakes
  • 1 tbsp. black pepper
  • 3/4 tbsp. oregano
  • 1 tbsp. garlic powder
  • 3/4 tbsp. salt
  • 1 tbsp. lemon juice
  • 3 lbs. deveined shrimp

Mix oil with spices and lemon juice. Marinate shrimp for about 1 hour in mixture. Bake in oven for 10 minutes at 450 degrees. Serve with fresh bread.

Shrimp Creole Recipe

  • Large can of tomatoes
  • 3 cups chopped celery
  • 1 large onion
  • 1 green pepper
  • 4 cloves garlic
  • 1 lb. cleaned shrimp
  • cooked rice

Chop onion, garlic and green pepper. Place in large heavy pot with celery and tomatoes. Cook until vegetables are tender over medium heat. Add Shrimp and cook an additional 5-10 minutes till shrimp are pink or done.

Grilled Shrimp Recipe

  • 1 lb of fresh raw shrimp cleaned and deveined
  • wooden skewers soaked in water for 20 minutes

Fire up your grill and wait till the coals are white. Meanwhile, take shrimp and put about 6 on each wooden skewer. Put on grill. Season with salt, pepper and Creole seasoning to taste. You will have to stay with this cause it doesn't take long for the shrimp to get done. When the sides of the shrimp begin to turn pink, turn them over. Shrimp is done when it is pink on the outside. Do not overcook. It should take about 5 minutes.

Best Shrimp Scampi Recipe

This is a very easy recipe and its very good too.

  • 1 lb. Shrimp cleaned and deveined
  • 1 tbsp. minced garlic
  • 1 medium onion cut up
  • 2 tbsp. butter
  • cooked pasta noodles (angel hair, spaghetti, fettuccini - whatever you prefer)
  • lemon juice (optional)

Melt butter in pan under medium heat. Add garlic and onions. If necessary lower heat so it wont burn. Cook onions till they are transparent. Add Shrimp and cook till they are pink. Add cooked pasta. Stir until coated with sauce. Season with salt and pepper. If desired add more butter to taste.
