These are simple and delicious recipes from my mother's recipe collection. Salads are good for you. They are good in the summer when your veggies are fresh from the garden.
other name: Overnight salad
ingredients
- 1/2 head lettuce, sliced 1/2 inch wide
- 1/2 cup celery sliced thing
- 1/2 cup green pepper, diced
- 1/2 cup sweet onion sliced thin
- 1 6-8oz. can sliced water chestnuts
- 1 1/2 cup mayonnaise
- 1 - 16oz package frozen peas
- 2 Tablespoon sugar
- 1/2 lb. bacon cooked, drained and cut into small pieces
- Parmesan cheese
Layer each ingredient in a glass bowl in the following order: lettuce, celery, green pepper, onion, water chestnuts, green peas. Mix sugar with Mayonnaise and pour over vegetables. Cover tightly with plastic wrap. Refrigerate overnight. Top with Parmesan cheese and bacon pieces before serving. Serves 8. Takes 30 minutes to prepare approximately.
Killed or Wilted Lettuce Recipe
This is a southern salad. It uses fresh leaf lettuce. Its very good. You have to eat it immediately because the bacon grease solidifies.
Ingredients
- 1 Head of Leaf Lettuce
- 3-4 Green or spring onions cut up
- 2-3 Slices of bacon
- 2 Tablespoons cider vinegar or white vinegar
Tear lettuce and mix with green onions. Set aside. Cook Bacon until done. Remove from pan and crumbled over lettuce and onions. Add Vinegar to grease. Mix well. Add Salt and Pepper. Remove from heat and pour while hot over Lettuce and onions. Serve immediately.
Cucumber Salad Recipe
This is a delicious recipe from my mother's recipe collection. Cucumber salad is a quick and easy salad to make. You might want to adjust the vinegar to your taste.
Ingredients
- 1 cucumber
- Vinegar
- Mayonnaise
- Salt and pepper
To Prepare Recipe: Slice cucumber. Add a small amount of vinegar, mayonnaise, salt and pepper to taste.

Tuna salad recipe
Here is another favorite recipe of mine. Its super simple to make and takes about 15 minutes max. All you do is boil some macaroni, cool, then stir some tuna, mayonnaise, peas, onions or whatever and its ready to eat. Its fillings. My kids love it. You can add different ingredients to suit your tastes.
Ingredients
- 1 7-oz. Pkg. Of Macaroni
- 1 6-oz. Can of tuna packed in water or pouch
- 1 cup of cooked frozen peas
- 1 small onion chopped
- 1 - 2 Tablespoons Mayonnaise
- Creole seasoning
- Garlic salt
To Prepare: Cook Macaroni according to package directions. Do not overcook. Put in bowl. Add Tuna (drained), frozen peas, onion, mayonnaise and seasoning to taste. Serve.
