  • cup Bisquick
  • 1 can evaporated milk

Mom's Pumpkin Custard Recipe

Pre-heat oven to 350 degrees

Ingredients

  • 1 can of pumpkin
  • 1 can of no-fat evaporated milk
  • 1/2 Cup of sugar
  • 2 - 3 teaspoons of pumpkin pie spice
  • 2 eggs or use an egg substitute
  • 8x8 pan - spray coated with cooking spray

To Prepare:

Beat eggs until yellow and frothy. Add sugar and blend well. Stir in Pumpkin. Add evaporated milk. Blend well. Stir in spices. Bake for 45 minutes to 1 hour in 350 degree oven or until middle is no longer liquid. Cool and serve with cool whip. Southerners traditionally make Sweet Potato pie. Substitute Sweet Potatoes for the pumpkin in any pumpkin pie recipe. Dice Sweet Potatoes and boil as you would to make mash potatoes.
