Mom's Pumpkin Custard Recipe
Pre-heat oven to 350 degrees
The delight is this desert recipe is low-fat, low-sugar, low calorie, fiber-filled, actually good for you, and Tastes great!
Beat eggs until yellow and frothy. Add sugar and blend well. Stir in Pumpkin. Add evaporated milk. Blend well. Stir in spices. Bake for 45 minutes to 1 hour in 350 degree oven or until middle is no longer liquid. Cool and serve with cool whip. Southerners traditionally make Sweet Potato pie. Substitute Sweet Potatoes for the pumpkin in any pumpkin pie recipe. Dice Sweet Potatoes and boil as you would to make mash potatoes. When Sweet potatoes are done, remove from heat, drain and mash without adding any milk or butter. Substitute in recipe.

follow the directions above recipe, only put the mixture into a pie shell, it usually takes 2 pie shells or one deep dish pie shell.

To Prepare: Sprinkle gelatin over run in small cup; let sit. Combine pumpkin, sugar and egg yolks. Add spices, vanilla and salt. Put gelatin (in cup) in pan of simmering water until dissolved. Put gelatin in pumpkin mix. Whip cream and fold into pumpkin mix. Chill in refrigerator until set. Serves 4.
Pumpkin Cake Recipe
This Cake is a very good recipe. It is moist and delicious. It makes a nice alternative to Pumpkin pie. You can make muffins or cupcakes instead of cake. It goes well with a cup of coffee, tea or milk. It makes a great breakfast cake instead of your usual coffee cake.
It is a nice alternative to your ordinary coffee cake for the morning break. Add some chopped nuts to the recipe for a nice flavor. Pecans or walnuts would make a good addition.
Sift together flour, soda, cinnamon and salt. Set aside. In a large bowl, cream together sugar and eggs, then add flour mixture and blend. Add oil and pumpkin and blend. Pour into a tube pan and bake at 350 degrees for 1 hour. Cool on rack and remove from pan before completely cool. Ice.
