This is a delicious recipe from my mother's recipe collection. These Pie recipes are quick and easy to prepare. They are very good too. Nothing like the smell of a pie baking in an oven.

Strawberry Rhubarb Pie Recipe
Preheat oven to 375 degrees
Combine rhubarb and strawberries. Mix flour, sugar and cinnamon together and stir into fruit. Place fruit mixture into a pie shell and dot with butter. Cover the fruit with the other pie shell. press the edges together. Cut a slit in the pie crust to allow steam to escape. Bake for 35 to 45 minutes until golden brown.Pecan Pie Recipe
Pecan pie is my favorite pie. Pecans are good for you along as you eat them in moderation. They have fiber and omega 3 which is good for your memory.
To Prepare: Beat together all Recipe Ingredients except the eggs and pecans. Add eggs one at a time blending together after each. Layer pecans on the bottom of a unbaked pie shell. Pour mixture over pecans and bake at 350 degrees for 40-50 minutes.
Coconut Pineapple pie is very good for holidays. Its sweet and rich so you don't want to eat a whole lot at one time.
Makes 2 pies

Sweet Potato pie is similar to pumpkin pie. Its good. This recipe is easy to prepare. Sweet potatoes are good for you. They contain fiber and vitamins.
Boil the potatoes in the jackets until done. Peel and mash potatoes. Add the butter, sugar, vanilla and nutmeg. Combine the beaten eggs and milk and mix with the potatoes until blended. Pour into the pie shell. Bake at 350 degrees for 1 hour or until a knife inserted in the center comes out clean.
Another Sweet Potato Pie Recipe
Mix ingredients together. Pour into a frozen pie shell. Dot with butter and bake at 350 degrees for 30-40 minutes or until done.
