Leftover Ham Hash Recipe
This is a delicious recipe from my mother's recipe collection. She would make this dish to finish off the ham leftover from a previous meal. Use enough ham to make the dish about 3/4ths meat to potato. You have to judge the proportions for yourself but the finished dish should be more pink from the ham than white from the potatoes. You can use as much or as little ham as you like. This is one of my favorite meals.

Spray frying pan with Pam cooking spray. Add about 2 Tablespoons of oil. (The reason you use Pam too is that the rice will absorb the oil and you will add a whole lot of oil which adds calories to keep this from sticking). Add onion and garlic. Saute until onions are translucent. Add Ham. Add veggies. Brown. Add rice. Stir till heated. Crack egg and put yolk and whites on top of rice. Cover. Cook till egg is done. Take fork and break up egg to distribute it in the rice. Add Worchester sauce and soy sauce to taste. Season with salt and pepper.
