Bacon Meat loaf

Basic Meatloaf Recipe

This is a delicious recipe from my mother's recipe collection. Meatloaf is a good way to stretch little  hamburger especially if you have unexpected guests for supper. During WWII, meat rations were limited to about a half a pound of Hamburger Meat a week. So, meatloaf was a good choice for supper. People used oatmeal, crackers, bread crumbs and stuffing mix as fillers. My mother tells a story that during WWii, my dad brought home company from work for supper unexpectedly. She made meatloaf with oatmeal to stretch the meal so she'd have enough. Its best to fix a meatloaf in advance and let it sit in the refrigerator before cooking. this lets the flavor mingle and the improves the flavor of the meatloaf.
