| Bacon Meat loaf | Basic Meatloaf Recipe This is a delicious recipe from my mother's recipe collection. Meatloaf is a good way to stretch little hamburger especially if you have unexpected guests for supper. During WWII, meat rations were limited to about a half a pound of Hamburger Meat a week. So, meatloaf was a good choice for supper. People used oatmeal, crackers, bread crumbs and stuffing mix as fillers. My mother tells a story that during Wwii, my dad brought home company from work for supper unexpectedly. She made meatloaf with oatmeal to stretch the meal so she'd have enough. Its best to fix a meatloaf in advance and let it sit in the refrigerator before cooking. this lets the flavor mingle and the improves the flavor of the meatloaf. To Prepare: Mix all ingredients together an place in 1 large loaf pan. Bake at 325 degrees for 2 to 2/3 hours.

To Prepare: Put hamburger in bowl and add onion, egg, salt and pepper. Mix well. Add ˝ can tomato soup and enough breadcrumbs to form a loaf. Place in loaf pan and spread top with remaining tomato soup. Place strips of bacon on top and bake at 350 degrees for 45 minutes to 1 hour
