Grilled Italian Chicken Barbeque Rub

Here is a very simple recipe for grilled chicken my boyfriend cooked up for me. Don't know the official name of the recipe but it goes like this, start the charcoal of a smoker grill and get the coals ready for cooking. The grill should have a lid large enough to accommodate a chicken length wise.

Warning: Make sure Chicken is done before you eat it. Juices will run clear, meat will be white to the bone. No pink or red. Raw chicken or chicken not cooked properly can be deadly.

Beer Can Chicken Recipe

ingredients

  • 3-4 pound whole Chicken
  • 12 oz Beer (any kind), substitution: soda or juice
  • Season all
  • Garlic salt
  • Olive Oil

Take a whole chicken about 3-4 pounds, rub it with olive oil lightly, sprinkle with garlic salt and season all.

Open a 12 oz. Beer and set the chicken on the open upright beer can.

Set the chicken and beer on a hot grill. Arrange the chicken legs so that the chicken will stand straight up without falling. (Spread them a bit)

Put the lid on the grill. Let cook for about 20 minutes a pound. A 3-pound chicken will take about an hour and 15 minutes depending on your grill.

To remove the chicken from the grill, stick 2 forks in each side and lift. You will have to gently shake the beer out or have someone with a potholder pull it out. If you shake the beer out be careful so as not to burn yourself.

The chicken is perfectly golden brown all over when you remove it from the grill. Its tender and the best chicken I've eaten.

Simple Grilled Italian Chicken Recipe

  • Skinless and boneless chicken breasts
  • bottle of Italian dressing (not creamy)

Marinade chicken in enough salad dressing to cover them for about 1 hour. Grill over hot coals till done

substitute: steak, pork chops or other meat

Chicken BBQ Rub

  • chili powder
  • cumin powder
  • onion powder
  • garlic powder
  • Salt
  • Pepper
  • brown sugar

take a pinch of each of the spices, sugar, salt and pepper and shake on chicken. Be sure not to touch raw chicken and return your hands to the spices or you will contaminate your spices and have to throw them away. Rub the spices into the chicken. Then grill on hot coals till done.
