To Prepare Recipe: Melt shortening. Mix salt and pepper in flour. Take Chicken pieces and dip in beaten eggs. Then roll in flour. Put in hot melted shortening (hot but not smoking). Chicken should sizzle when hitting the melted shortening. Turn heat to medium low, cover and cook until chicken is done. Turning when one side is golden brown.
Use the recipe above, only use boneless chicken cut up into small pieces. You can add various spices to the flour and it makes the chicken better. Garlic is always good to add to the oil in cooking.
Oven Fried Chicken Recipe
smash corn flakes into crumbs and add seasoning. Beat eggs, mayonnaise and milk together. Coat chicken with mixture then roll in cornflakes
Place on greased cooking sheet. Bake at 350 degrees for 35 to 45 minutes.
Cashew Chicken Recipe
Mix eggs and soy sauce. Marinate chicken in mixture for 30 minutes. Heat oil in pan. Dip chicken in cornstarch mixture being careful to coat the entire surface. Heat oil till hot not smoking. Fry for 12 minutes in hot oil. Serve on rice with soy sauce as a dip. sprinkle cashews on top.
