Creamed chicken is a very satisfying meal. Kids like it. You can serve it with some stuffing, a vegetable, mashed potatoes or rice. Creamed chicken is a dish my mother used to make for leftovers. After Thanksgiving, when we grew tired of turkey sandwiches, Mom always made this dish substituting turkey for the chicken. We always knew the leftover turkey was about gone and was quite grateful.
Warning: Always Make sure Chicken is done before you eat it. Juices will run clear, meat will be white to the bone. No pink or red. Raw chicken or chicken not cooked properly can be deadly.
Creamed Chicken Recipe
Preparation time: 15 minutes
variations to this recipe are an inexpensive can of dried beef, leftover turkey or any kind of meat except beef.
To Prepare Recipe: In a 10 or 12-inch frying pan, melt butter or margarine or medium high heat. Add flour stirring. Add enough milk to thicken to desired consistency. (Follow method for making gravy above, except use these Recipe Ingredients
Add meat, you do not need much. Serve hot on toast or rice. Good stick to your rib meal. You can omit meat and add cheese for cheese sauce that is excellent with tortilla chips.
Substitute: can of dried beef, turkey or other meat for chicken.

Quick Asian Fried Rice Recipe
This is a very versatile dish. Substitute any meat you like. Ham is very good with this. You can add or leave out whatever you like. The amounts are what ever you have on hand. Don't over due it cause you'll have more than you can eat.
If necessary, cut left over chicken up in small bite size pieces. Fry with onions and garlic till onions are transparent. Do not burn garlic. Add cooked vegetables. Stir fry. Add rice. Stir. Add salt, pepper, soy sauce and Worchester sauce to taste. Crack egg and place it on top of cooked mixture. Do not break egg or mix yet. Cover with lid and let steam until egg is done. Take a fork and break cooked egg up stirring into rice. Make sure egg is done.
You can leave out the sauces, add different spices, substitute the meat, leave out the vegetables or use anytime you want. Add hot peppers, ginger or what ever you like. Experiment with this one.
