Chicken Almond casserole makes a hearty meal. Its best served over rice but you could use stuffing or potatoes as a side dish. Chicken Almond Casserole is another great leftover dish recipe. My mother made this casserole dish for company of course she didn't use leftovers.

Warning: Always Make sure Chicken is done before you eat it. Juices will run clear, meat will be white to the bone. No pink or red. Raw chicken or chicken not cooked properly can be deadly.

Chicken Almond Casserole Recipe

Recipe Ingredients

  • 3 Boneless chicken breasts cooked or 1/2 a chicken breast per person)
  • 2 Cups diced celery
  • 3/4 Cup almond slivers
  • 1 Diced onion
  • 1 Can of water chestnuts sliced
  • 1 Can of cream of chicken soup (do not dilute)
  • 1 Can of cream of mushroom soup (do not dilute)

To Prepare Recipe: Cut chicken in small pieces and mix with other Recipe Ingredients put in a greased casserole dish. Make wells with the back of the spoon in the chicken mixture. In each well pour a mixture of 1 can of mushroom soup and 1 can of cream of chicken soup. Bake at 325-degree oven for 1 hour. Serve over Chinese noodles

Variations: substitute Turkey for Chicken

Chicken and Broccoli Casserole Recipe

  • 2 cups cooked chicken
  • 1 large bunch of broccoli or 10oz package frozen
  • 2 cans cream of chicken soup
  • 1 cup mayonnaise
  • 1 cup bread crumbs
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 12 tbsp. melted butter

cut chicken in bite sizes add to 9x12 baking pan. Cook broccoli till done. Cut broccoli into bite sizes. Spread evenly over chicken. Combine soup, milk and mayonnaise together. Pour over chicken and broccoli. sprinkle cheese on top. Mix bread crumbs with butter and sprinkle over cheese. served over rice or noodles.

Chicken and Squash Casserole Recipe

serves 6-8

ingredients

  • 4 cups cooked drained mashed squash
  • 2 small onions chopped
  • 8 oz. sour cream
  • 1 can cream of chicken soup
  • 4 cooked chicken breasts cut up
  • 1 cup of stuffing mix
  • 3/4 cup margarine

to prepare:

Mix above ingredients except stuffing and margarine. Put 1/2 cup of stuffing mix in the bottom of a 2 qt. casserole dish. Pour in mixture. sprinkle remaining stuffing on top. Pour melted butter over top. bake at 350 degrees for 30 minutes.

Variation: omit squash
