Tarragon Chicken and Rice Recipe
This recipe smells good cooking. It takes about 20 minutes to prepare. My kids love it. You can serve it with about any kind of vegetable you want
Warning: Always Make sure Chicken is done before you eat it. Juices will run clear, meat will be white to the bone. No pink or red. Raw chicken or chicken not cooked properly can be deadly.
To Prepare Recipe: Cut chicken in small pieces. Roll in cornstarch and cook in 1/4 cup of oil. Cook chicken until chicken is brown. Add chopped scallions, Tarragon, thyme and black pepper. Cook for 2 minutes. Add chicken broth, cover and simmer 10 minutes. Add mushrooms and simmer 5 minutes Serve over hot Rice.
Chicken Supreme Recipe
In large skillet, cook chicken in butter till done. Remove from pan. Add garlic, onions, mushrooms to drippings of pan. cook until onions are tender. Stir in mustard and cream simmer, stirring until sauce starts to thicken. Return chicken to pan. Coat with sauce. Serve over Rice.
Baked Chicken and Rice
Place rice evenly in 9x13 baking pan. Place chicken on top of rice evenly. Sprinkle onion soup mix over chicken. Mix mushroom soup with 1 can of water and pour over chicken and rice. cover with foil and bake at 350 degrees for 1 hour. Remove foil 15 minutes before hour is up to allow to brown.
Put 4 piles of rice in the center of the foil. Sprinkle 1 tbsp. of onion soup mix over each pile of rice. Put chicken pieces on rice. Pour 2 tbsp. of broth over chicken pieces then sprinkle with 1 tbsp. onion soup mix. Put 1 tsp. of butter over each. Bring foil together. fold under twice on each side. Place on cookie sheet bake 350 degrees for 1 hour and 15 minutes.
