 Corn and Green Bean Casserole

This vegetable Casserole is a variation of the Broccoli and cheese Casserole recipe. Its delicious. I make this dish for the holidays. It makes a good dish for company. It easy to make and serves up nicely.

Mixed Vegetable Casserole Recipe

Ingredients

  • 1 package of mixed vegetable cooked
  • 1 chopped medium onion
  • 1 cup grated cheese
  • cup mayonnaise
  • cup mushroom soup
  • Crumbled Ritz crackers

To Prepare Recipe: Crumble Ritz crackers and set aside. Butter the bottom of a Casserole dish. Mix together all Recipe Ingredients except crackers. Pour Recipe Ingredients into Casserole dish and spread crumbled crackers on top. Bake at 350 degrees for 30 minutes.

Variations: add green peppers, add more onions.

For Broccoli Cheese Casserole substitute cooked chopped broccoli for mixed vegetables in the above recipe

Vegetable Casserole

serves 6-8

ingredients

  • 2 16oz cans veg-all drained
  • 1 8oz can water chestnuts drained
  • 1 can French fired onion rings
  • 1 cup grated medium cheddar cheese
  • 3/4 cup mayonnaise
  • salt and pepper to taste
  • 1 cup corn flake crumbs mixed with 2 tbsp. butter

To prepare:

Break up onion rings in fairly small pieces. Mix all ingredients except corn flake crumbs. Pour mixture into casserole dish and top with cornflakes. bake for 20-30 minutes at 350 degrees.

Corn and Green Bean Casserole

  • 1 12oz can corn drained
  • 1 16oz can French green beans drained
  • 1/2 cup celery chopped
  • 1/2 cup onion chopped
  • 1 2oz jar pimentos chopped (optional)
  • 1/2 cup sharp cheddar cheese grated
  • 1 10oz can cream of celery coup
  • 1/2 tsp. salt and pepper

Topping

  • 1 cup Ritz cracker crumbs
  • 1/2 stick butter melted
  • 1 1/2 cups slivered almonds

Mix all ingredients together except for the topping. Place in 1 1/2 quart casserole dish. Sprinkle topping over casserole. Combine topping ingredients. Sprinkle over casserole. Bake at 350 degrees for 45 minutes.
