Shrimp Casserole

This is a delicious recipe from my mother's recipe collection. This makes a good, easy meal to serve to company. Crab meat is a delicacy.  There isn't much meat on a crab so you can stretch it with this Casserole.

Deviled Crab Casserole Recipe

Ingredients

  • 1 lb. Fresh crabmeat
  •  18 saltine crackers
  • 1 stick margarine or butter in small pieces
  • c milk or half and half
  • Pinch red pepper
  • Pinch dry mustard
  • 2 T Worchester sauce (use more if desired)

Pick through crabmeat and discard shells.

Roll with rolling pin saltines until coarsely ground.

Mix ingredients (except milk) with hands or fork. Put in except milk in Pyrex type dish, 8x8

Pour milk or cream over ingredients. Bake at 375 degrees uncovered for 20 minutes or until bubbly. Add more cream if it dries out.

Shrimp Casserole

  • 2 1/2 peeled and de-veined raw shrimp
  • 1 tbsp. lemon juice
  • 3 tbsp olive oil
  • 3/4 cup raw rice
  • 1/4 minced onion
  • 2 tbsp. butter
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 1/8 tsp. mace
  • 1 can undiluted tomato soup
  • 1 cup whipping cream
  • 1/2 cup sherry
  • 3/4 slivered almonds

Cook shrimp in boiling salted water for 5 minutes or till pink. do not overcook. Drain. Place in 2 quart casserole dish and sprinkle with lemon juice and olive oil. cook rice according to package directions. refrigerate everything. In saucepan saute green peppers and onion in butter over medium heat 5 minutes. Add rice, salt, pepper, mace, soup, cream, sherry and 1/2 cup of almonds to shrimp in casserole dish. toss well. top with remaining almonds. bake at 350 degrees for 20 minutes till mixture is boiling.

This is a delicious recipe from my mother's recipe collection. I love shrimp. This is an easy and quick recipe.  Shrimp is a low calorie protein but its high in cholesterol. Casseroles make a good dish for company because you can stretch a little bit of meat or seafood and make it go a long way..

Another Shrimp Casserole Recipe

 

Ingredients

  • 6 slices bread
  • 1 lb. Cooked  SHRIMP
  • lb. Sharp cheese
  • cup melted butter or margarine
  • teaspoon dry mustard
  • 3 whole eggs or egg beaters
  • 1 pint of milk
  • teaspoon salt

To Prepare: Cut bread into pieces. Cut cheeses into bite sized pieces and arrange over bread, cheeses and shrimp in layers in a greased casserole dish. Pours melted butter into the egg mixture and add the milk and stir. Pour this over the ingredients in the casserole dish. Place the covered casserole in the refrigerator over night. Bake at 350 degrees for 1 hour.
