These are some delicious recipe from my mother's recipe collection. Casserole dishes are great for dinner parties or leftovers. My mom always made a casserole for guests cause it stretch the meat. She also always made a casserole with leftovers to stretch a meal.

Potato Casserole Recipe

Ingredients

  • 10-12 potatoes
  • 1 stick butter or margarine melted
  • 2 tablespoon flour
  • 1 tablespoon water
  • 5-6 shakes garlic salt
  • salt and pepper to taste
  • corn flake crumbs

Preheat oven to 400 degrees. Boil potatoes with skins on. When done, peel and cube. Place in large bowl. Meantime, prepare a 1 or 2 quart casserole dish. Spray with nonstick spray. Add a bit of butter to the dish. Place corn flakes crumbs in casserole dish. Pour remaining butter into potatoes, add flour, water, salt, pepper and garlic salt; stir well. Pack tightly into casserole dish. Place a piece of wax paper on top and press down. Bake 45 minutes at 400 degrees. When done, run knife around edge put plate on top and turn out on plate and garnish with parsley.

Homemade Macaroni and Cheese Recipe

Macaroni and cheese casserole is a satisfying dish than can be used as a side dish or even a main course. Macaroni and cheese is filling. Kids love it. And believe it or not it takes as much time to make as the instant junk in the box. This is not a low calorie dish. So, if you are watching your weight, take it easy on your portion.

This is an easy Casserole to make. Most people have the ingredients on hand. I have made this recipe using sliced sandwich cheese and it still turned out delicious. I even made it with canned milk once when I didn't have regular milk on hand. It will fill your kids up. And they will come back for more.

Ingredients

  • 1 lb. Box macaroni
  • 2 tablespoon butter
  • 2 tablespoons of flour or cornstarch
  • 8 oz cheddar cheese grated
  • 2 cup milk
  • Salt and pepper
  • Breadcrumbs

To Prepare Recipe: boil macaroni according to package instructions. while macaroni is boiling, Melt 2 tablespoons of butter or margarine in a quart size pot, sprinkle flour or cornstarch, stirring with a fork to get rid of lumps. slowly add milk, stirring continuously. until thick. Add cheese and stir until melted. Drain macaroni after cooking time is up. Do not allow to sit in water because it will be too done. put macaroni in a buttered casserole dish. Stir in milk and cheese mixture until evenly distributed. top with breadcrumbs. bake in a 350 degree oven until bubbly.

Easy Mac n Cheese Recipe

  • 2 cans mushroom soup
  • 8 oz. box of macaroni
  • 1 cup sharp cheddar cheese
  • 1 grated onion
  • 1 small jar pimento
  • 1/2 cup Miracle whip or mayonnaise
  • 1 can water chestnuts (optional)
  • 15 Ritz crackers

Cook macaroni. Drain. Mix all ingredients except cheese and crackers with macaroni. Turn into a 9x11 casserole dish. Top with cheese and cracker. Refrigerate overnight. Bake at 325 degrees until bubbly.
