Cheesecake is my one of my weaknesses. I love it. Can't go to a restaurant without ordering a slice. Here is a collection of the best cheesecake recipes I have tried. They are smooth and creamy. These cheesecakes are easy to prepare. They go well with a cup of coffee or tea. Enjoy!

Old Fashion Cheesecake Recipe
Preheat oven to 325 degrees. Prepare a large pan with butter and sprinkling it with graham cracker crumbs. Blend cream cheese and sugar together in a large mixing bowl beating until well blended. Add eggs and continue beating until smooth and creamy. Add, lemon juice, rind and salt. Beat until smooth.
Pour mixture into prepared the pan and place into another pan of hot water in the oven. Bake at 325 degrees for 1 ½ hours or longer if necessary. The cake should be firm around the edges and soft in the center. Remove from oven and cool in pan. Let the cheesecake stand in the refrigerator overnight before removing from pan.
Garnish cheesecake with strawberries; coat the berries with an apricot glaze (below)
Cook until the sugar is dissolved with nectar and corn syrup. Cool and coat the fruit to be used as garnish with glaze.
Velvet Cheesecake Recipe
To Prepare Recipe: Preheat oven to 350 degrees. Mix together graham cracker crumbs, 2 tablespoons of sugar, butter and cinnamon. Press firmly on bottom and sides of well buttered 9 inch cake pan. Add lemon rind, salt and ¾ cup sugar to cream cheese; mix well. Add eggs, one at a time, beating well after each addition. Turn into pan and sprinkle with cinnamon. Bake 25 minutes. Chill several hours or overnight. Served with crushed sweetened strawberries. Serves 8.
Filling Recipe Ingredients
To Prepare Recipe: Combine well-beaten eggs, cheese, sugar, salt, and almond extract. Beat until smooth. Blend in sour cream and beat together. Put in crust (below) and bake for 35 minutes. Remove from oven. Top with Cherry pie filling. Chill in refrigerator for several hours.
Preheat oven to 375 degrees. Press crust into bottom of pan (angel food pan works well) and spread 2 ½ inches up sides.
