Easy Cake Recipes: Red Velvet - Apple - Cheesecakes - Chocolate - Carrot - Pumpkin - Wine - Pound Cakes

These are delicious recipes from my mother's recipe collection.  The cake recipes are quick and easy.  You can add nuts or different flavoring to vary the recipe somewhat.

This cake is usually made for special occasions. Its delicious with the cream cheese icing. Heat oven to 350 degrees


  • 1 cup shortening or butter
  • 1 cup sugar
  • 2 eggs
  • 2 oz food coloring (red)
  • 1 teaspoon baking soda
  • 1 tablespoon cocoa
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 cup plain flour
  • 1 teaspoon vanilla
  • 1 teaspoon vinegar
  • greased and floured tube pan

To Prepare Recipe

Cream shortening or butter with sugar, add eggs one at a time, add food coloring and cocoa. Sift flour and salt together. Add to mixture. Stir in buttermilk. Sprinkle soda and pour vinegar over batter. Stir until thoroughly mixed. Stir in vanilla. Bake for 30 to 35 minutes.

Cream Cheese Frosting

  • 1 3-oz pkg of cream cheese softened
  • 1 tablespoon of milk
  • 1 teaspoon of vanilla
  • dash of salt
  • 2 cups confectioners sugar

To Prepare Recipe: Blend cream cheese, milk, vanilla and salt. Gradually add sugar. Beat until frosting is smooth and of spreading consistency. If too thick add 1 teaspoon of milk at a time until able to spread easily.

Wine Cake Recipe

This cake is an old recipe of my mother's. It is a variant of a boxed mix cake. It uses Jell-O pudding along with the wine to make a flavorful, moist cake.


Pre-heat oven to 350 degrees

  • cup Pecan Pieces
  • 1 small Jell-O instant vanilla pudding
  • cup Water
  • 4 eggs
  • 1 pkg. Butter cake mix
  • cup White Wine
  • cup cooking oil

To Prepare Recipe: Grease and flour tube pan. Sprinkle nuts in bottom of pan. Mix other Recipe Ingredients 2 minutes. Bake for 50 to 60 minutes.


  • 1 cup sugar
  • 1 stick butter of margarine
  • cup White Wine
  • cup water

Mix Recipe Ingredients together in a saucepan. Bring to a boil. Boil 2 to 3 minutes. Drizzle over cake.

Mexican Wedding Cake Recipe

You don't have to get marriage or even go to a wedding to enjoy these treats. Mexican Wedding cakes are delicious. These are individual cakes rolled in confectionary sugar. They are light and melt in your mouth. Enjoy!


  • 1 cup soft butter
  • 1 cup sifted powdered sugar
  • 1 cup chopped
  • 1 teaspoon
  • 2 cups all purpose flour

To Prepare Recipe: Beat butter until smooth and creamy. Add sugar a little at a time, beating constantly. Add nuts and vanilla. Gradually add flour. Refrigerate until firm. Form round balls and roll into little logs. Bake at 375 degrees for 12 to 14 minutes or until golden. Remove from oven and allow to cool. When cool, roll in powdered sugar. Makes 3 dozen
