Cabbage is a cheap vegetable. Its good for you too. The simplest way to fix cabbage is to boil it or make coleslaw.
Cabbage varieties: green, solid white, Savoy, red cabbage, Chinese cabbage.
The greener the cabbage the more nutritional value. Select a firm head. One small head serves 4-6. 1 pound serves 3.
Cut cabbage into small wedges. Throw core away. Fill a large pot with water. Add cabbage wedges. Add Salt and pepper, 2 tablespoons of butter or bacon grease. Bring to a boil. turn heat down to medium. And gently boil till tender, about 30 minutes. Serve.
Simple Cole Slaw
Grate cabbage into large bowl. Add chopped onions. If desired, add grated carrots. Salt and pepper. For a spicy version, use Tony's Creole seasoning mix to taste instead of salt and pepper. Stir in 1 tablespoon of Mayonnaise or enough to just coat. some people like a lot of mayonnaise and some don't. So, add all these ingredients to taste.
For variety you can add:
stuffed olives, cut celery, apple and/or drained crushed pineapple
1 small head of cabbage, cut up and cooked until tender but still crisp. drained and season with salt and pepper. Set aside. Melt butter in a saucepan, add 1/4 cup sliced celery, cook for 5 minutes. Stir in 2 tablespoons of flour, gradually add 1 cup milk. cook until thick, stirring constantly. Season to taste. Add cooked cabbage. Put in baking dish. Top with bread crumbs. Bake at 400 degrees until hot and top is brown. serves 4-5.
Red Cabbage and apples
Heat 4 tablespoons of bacon fat until melted. Add 2 tablespoons of sugar. Stir until brown. Add 1 small chopped onion. Cook slowly until golden. add 4 cups shredded red cabbage, 2 sliced apples, 2 tablespoons of vinegar, salt and pepper. cook slowly until very tender, adding a little red wine to keep from sticking.
