Zucchini bread doesn't sound all that good but it is. Zucchini bread is moist and the nuts make a nice flavor. You don't have to use nuts but I don't think the bread is that good without them. You can also make muffins from this recipe.

What to do with all that Zucchini? Squash is the one food that is easy to grow. You can plant one plant and feed your entire neighborhood and workplace.  If you have planted squash this year, you probably have an excess to say the least. Neighbors are probably turning you away when you visit with your basket. If you don't like to waste food, but are tired of your Zucchini then consider baking bread and freezing it. Squash doesn't freeze well on its own. Or give it to your neighbors or work friends as gifts.

Zucchini Bread Recipe


  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar  2 cups raw zucchini unpeeled and grated
  • 3 teaspoon vanilla extract
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • 3 teaspoon cinnamon
  • 1 cup chopped walnuts

To Prepare Recipe:

Beat eggs until light and foamy. Add sugar, oil, vanilla, and zucchini. Mix well. Combine flour, salt, cinnamon, soda and baking powder. Add flour mixture to squash mixture. Stir well until blended. Add nuts. Pour into two 9x5x3-inch loaf pans. Bake at 350 degrees. bake till knife inserted comes out clean, about 45-minutes to 1 hour.

Grilled Zucchini Recipe

Recipe Ingredients

  • Zucchini cut lengthwise do not peel
  • 1 bottle Italian (Oil base not creamy) dressing

To Prepare Recipe:

Pour Italian dressing over Zucchini and marinate in refrigerator for 2 hours. When time is up, prepare grill and wait until coals are white. Remove Zucchini from marinade and put on hot grill. Cook for about 2 minutes on both sides. Be sure to check often to make sure that zucchini does not burn. Best to grill your meat first and throw zucchini to grill after meat has finished cooking.
